Choco-Zucchini Loaf


Serves 16. Nutrition per serving: Calories - 227, Protein - 4g, Carbohydrates - 41g, Fat - 6.4g, Cholesterol - 40mg
2 C flour
1/3 C cocoa (powdered)
½ tsp baking powder
½ tsp baking soda
½ tsp salt
1¾ C sugar
3 eggs
¾ C applesauce
1/4 C canola oil
1 tsp vanilla
½ C chocolate chips
2 C zucchini (grated)
Preheat oven to 325°. Coat two 8" loaf pans with non-stick cooking spray. Combine first 5 ingredients in a large bowl. In a separate bowl, blend next 5 ingredients. Fold flour mixture just until combined. Add chocolate chips and zucchini gently. Divide between pans and bake 55-60 minutes. Let cool, then slice.
