Cranberry Pork Loin

1 2 lb. pork loin |
Basting Glaze |
1 can cranberry sauce (16 oz. whole berry)
2/3 C orange juice
2 tsp orange zest
3 tsp balsamic vinegar |
¼ tsp cinnamon
¼ tsp cloves
¼ tsp allspice
¼ tsp salt
¼ tsp pepper |
Preheat oven to 425°. Bring basting glaze to boil in a saucepan. Reduce heat and simmer 15 minutes. Divide glaze in 2 bowls; one for basting, one for serving. Place pork on a greased roasting pan and bake 40 minutes, basting occasionally. Serve pork sliced with remaining sauce. |
