Apple Crisp

Apple Filling
¼ C apple juice
1 tsp cornstarch
6 apples (Granny Smith, medium sized, peeled & thinly sliced)
3 T sugar
½ tsp cinnamon
½ tsp nutmeg
juice of ½ lemon
Crumb Topping
1 C flour
½ C white sugar
½ C brown sugar
¾ tsp salt
½ tsp cinnamon
1 tsp baking powder
1 egg
1/3 C butter (in chunks)
½ C nuts (chopped, optional)
Heat oven to 350°. Dissolve cornstarch in apple juice. Toss apples with sugar, cinnamon, nutmeg, lemon juice and apple juice mixture. Coat a 9" square baking dish with non-fat cooking spray. For topping, mix flour, sugar, salt, powder and cinnamon in a food processor. Pulse in egg then butter to form meal. Mix in nuts, if desired, by hand then crumble over apples. Bake 40 minutes until brown. Serve hot with ice cream.
