|1 jalapeño pepper (seeded, sliced)
1 T butter
½ onion (sliced)
4 tomatoes (diced)
|1½ tsp chili powder
½ tsp cumin
|Sauté onions and pepper in butter 5 minutes. Stir in tomatoes and spices. Bring to a boil, reduce heat and simmer 5 minutes. Carefully slide eggs in tomato mixture and cook on medium heat 3-5 minutes. Salt and pepper to taste. Garnish with avocado.
