Hearty Minestrone


Serves 8. Nutrition per serving: Calories - 211, Protein - 7g, Carbohydrates - 28g, Fat - 9g, Cholesterol - 0mg
Ingredients:
1/4 C olive oil
1 medium onion (chopped)
3 cloves garlic (minced)
3 carrots (minced)
2 ribs celery (diced)
6 medium gold yukon potatoes (diced) 2 yellow squash (sliced)
10 large spinach leaves (torn)
1 can chopped tomatoes (16 oz.)
1 can fat-free chicken stock (16 oz.)
Pesto:
3 cloves garlic (minced)
1/3 C basil
1 T olive oil
Saute onion and garlic in oil 3 minutes.  Stir in next three ingredients and cook 5 minutes.  Add remaining ingredients plus 5 cups water.  Bring to boil, reduce heat and simmer until veggies are tender.  Meanwhile blend pest ingredients in food processor until smooth.  Add to soup and cook 5 minutes.  Season with salt and pepper.  Add some cooked orzo or rice and serve with parmesan cheese.
