Cranberry Compote


Serves 12. Nutrition per serving: Calories - 110, Protein - 1g, Carbohydrates - 25g, Fat - 2g, Cholesterol - 0mg
Ingredients:
1 bag cranberries (16 oz.)
1 C apple juice
1/3 C granulated sugar
1/3 C brown sugar
˝ tsp cinnamon
˝ tsp allspice
1/8 tsp salt
1 C dried fruit (diced small)
1 apple (peeled and chopped)
1 pear (peeled and chopped)
1 orange (peeled and pureed)
1/4 C pecans (chopped)
In a large saucepan, cook juice and sugar until sugar dissolves.  Reduce heat and add cranberries and spices.   Cook 20 minutes.  Mash roughly then add remaining ingredients.  Simmer 20 minutes.   Chill overnight.
