Holiday Popover


Serves 6. Nutrition per serving: Calories - 187, Protein - 5g, Carbohydrates - 39g, Fat - 3g, Cholesterol - 5mg
Ingredients:
Popover:
˝ C flour
˝ C skim milk
4 egg whites
1 T butter (melted)
1/8 tsp salt
Fruit Filling:
1 large apple (diced)
1 large pear (diced)
˝ C orange marmalade
˝ C apple juice
˝ tsp cinnamon
˝ tsp nutmeg
˝ tsp ginger
˝ C blueberries (fresh)
In a blender, mix flour and milk.  Blend in egg whites, butter and salt.  Pour into buttered 9" x 9" square pan.  Bake for 30 minutes at 400°.  Heat filling ingredients in saucepan until bubbly.  Serve popover hot from the oven mounded with fruit.
