Pesto Ziti

3 C ziti (uncooked)
6 C water (boiling)
Tomato Sauce:
2 T olive oil
1 onion (medium chopped)
2 cloves garlic (minced)
1 bay leaf
2˝ C tomatoes (crushed in puree)
1/4 tsp salt
˝ tsp pepper
Cheese Mix:
˝ C ricotta cheese (part skim)
1 C mozzarella cheese (part skim, grated)
1/4 C pesto (in a jar)
Heat oven to 350°.  Add ziti to hot water and cook 8 minutes.  Drain and rinse.  Heat oil in saucepan and saute onion 5 minutes.  Add garlic and cook 1 minute.  Add tomatoes, bay leaf, salt and 1/4 tsp pepper.  Simmer 10 minutes.  Remove bay leaf.  In a bowl, combine ricotta, 2/3 cup mozzarella, pesto and 1/4 tsp pepper.  Place half the ziti in an 8" square baking dish coated with non-fat cooking spray.  Cover with half the tomato sauce followed by the cheese mixture.  Fill with remaining pasta then sauce.  Cover with remaining cheese.  Bake 30 minutes.
