Grilled Chicken Salad


Serves 6. Nutrition per serving: Calories - 230, Protein - 30g, Carbohydrates - 11g, Fat - 8g, Cholesterol - 72mg
Ingredients:
Marinade:
½ C lemon juice (fresh)
½ olive oil
2 tsp salt
1 tsp pepper
2 T lemon thyme (chopped)
1½ chicken breasts (boneless, skinless)
Salad:
1 red bell pepper
1 cucumber (sliced)
1 small red onion (sliced)
mixed greens (14 oz.)
Dressing:
1/3 C mayonnaise (light)
1/3 C buttermilk
1 clove garlic (minced)
¼ C cilantro (chopped)
3 T onion (minced)
dash hot sauce
Marinate chicken 1 hour.  Discard marinade and grill chicken over hot coals 6 minutes each side.  Slice diagonally.  Toss salad and to with chicken.  Mix dressing adding salt and pepper to taste.  Drizzle over salad and serve.
