Pizza Margherita


Serves 12. Nutrition per serving: Calories - 211, Protein - 10g, Carbohydrates - 26g, Fat - 7g, Cholesterol - 10mg
Ingredients:
Pizza Sauce:
2 T olive oil
3 garlic cloves (large, minced)
1 can crushed tomatoes (28 oz.)
5 fresh basil leaves (chopped)
salt and pepper to taste
Pizza:
2-12" prepared pizza crusts (thin)
12 fresh basil leaves (roughly chopped)
6 roma tomatoes (thinly sliced)
2 C mozzarella cheese (part skim, grated)
For sauce, heat oil, then add garlic and saute 30 seconds.  Add tomatoes and cook on medium heat 10 minutes.  Add basil, salt and pepper to taste.  Simmer 15 minutes.  Divide sauce between two pizza crusts spreading within ˝" of the edge.  Top with basil first, tomatoes, then cheese.  Cook in 450° oven 10-15 minutes.  For added flavor, brush tomatoes with olive oil before cooking and top with extra fresh basil after cooking.
