Pepper Bean Salad

Ingredients: |
Venaigrette: |
3 T vinegar (apple cider)
2 garlic cloves (crushed)
3 T brown sugar |
2 T olive oil
¼ tsp salt
¼ tsp pepper |
Salad: |
1 C fresh green beans (sliced)
½ red onion (sliced)
½ each red/green/yellow bell peppers (sliced) |
½ C grape tomatoes
1 can butter beans (15 oz.)
2 T fresh basil (chopped) |
In a heavy saucepan, combine vinaigrette and simmer over medium heat 5 minutes. Combine salad ingredients in a bowl. Pour hot vinaigrette over salad and mix thoroughly. Chill 24 hours. |
