Harvest Chicken Soup


Serves 6. Nutrition per serving: Calories - 154, Protein - 18g, Carbohydrates - 14g, Fat - 1g, Cholesterol - 23mg
Ingredients:
6 C chicken stock (non-fat)
8 oz. chicken breasts (boneless)
1 tst anise seed (crushed)
1˝ C baby carrots
1 can white beans (15 oz.)
1˝ C collard greens (chopped)
Poach chicken in boiling stock unti opaque.  Remove from broth and allow to cool on a paper towel.  Add anise and carrots to borth and cook over moderate heat until carrots begin to soften.  Chop greens into large pieces and add to broth along with beans.  Shred chicken into bite size pieces and return to broth.  Heat until greens wilt.  Salt and pepper to taste.
