Wrap Mediterraneo

4 large burrito tortillas (10" flour)
1 C arborio rice w/saffron (cooked)
2 C salad greens (torn)
3 oz. feta cheese
1 tomato (diced)
˝ red onion (medium, diced)
3 T lemon juice
2 T olive oil
1 T vinegar (apple cider)
1 T oregano (fresh)
2 garlic cloves (minced)
1/8 tsp coarse pepper
Divide cooked rice evenly over 4 tortillas.  Add feta, tomato, onion and greens to each. Shake vinaigrette in cruet and dress each serving.  Wrap like a burrito, folding bottom closed.  Dig in!
