Mandarin Chicken

4 4-oz. boneless, skinless chicken breasts 2 T. orange marmalade
1 11-oz. can mandarin oranges,
juice drained and reserved
1 t. crushed red pepper
1 T. corn starch
12 oz. pineapple juice ˝ salt
˝ t. black pepper ˝ t. ground ginger
2 T. orange juice concentrate 1 T. sesame oil

Combine drained juice, 6 oz. of the pineapple juice, and pepper. Pour over chicken, cover, and refrigerate 1 to 2 hours. Remove chicken; discard marinade. Heat oil in a skillet, add chicken, and cook over medium heat until done, about 15 minutes. Stir remaining ingredients in a pan over high heat until thickened. Spoon sauce over chicken.
